These days I have left some comment on a toast that I made with Arzúa Ulloa and has been rereading my recipe and I have wanted to make a new recipe but logically changing some things. In this case we have a montadito without bread, marinated Iberian sirloin, caramelized onion and Arzúa Ulloa.
Now, to keep this together I could opt for the typical stick, in that case you could call me skewer. Or in a more exotic option, such as holding it together with a strip of nori seaweed.
Ingredients for 4 people
- 2 Iberian sirloins, 2 tablespoons sweet paprika, 1 tablespoon oregano, salt, extra virgin olive oil. In addition, 1 onion, 2 tablespoons of sugar, sherry vinegar and Arzúa Ulloa cheese.
How to make a montadito without Iberian sirloin bread
First we adore the tenderloins. We will put them in a bowl and add the paprika, oregano, salt and oil. Mix well and leave at least a couple of hours. But if you want you can leave it cold overnight.
After the marinade time, we will do the caramelized onion. We peel it, cut into julienne and we pocha. When it is soft add the sugar and a little vinegar. We reserve We cut the Arzúa Ulloa into lardones.
We make grilled sirloin. And when it is done to the point we want, it will only be riding. We put the nori seaweed strip and with it we wrap the cheese, the onion and the sirloin.
