Chocolate cake and blackberry jam. Recipe

In spite of the terrible heat that we are suffering these days, I am not able to resist turning on the oven from time to time, although I do try not to get too close while it is on. Today I have started it on a whim, which seems to me as good as any other reason, especially if what is cooked is a chocolate cake and blackberry jam.

In the case of today I used mulberry blackberry jam, which I prepared canned in early summer, although in fact it can be done with any type of jam, as always in these cases we only have to take into account one thing and It is, of course, the title of the recipe. We are not going to call him “... and blackberry jam“When we have used for example red fruit jam, which by the way is I think one of the best alternatives we can find to blackberries.

Ingredients

125 grams of brown sugar, 100 grams of flour, 1 envelope of royal type yeast, 150 grams of butter, 3 eggs, 125 grams of chocolate for desserts, 8 tablespoons of blackberry jam, a pinch of salt.

How to make the chocolate cake and blackberry jam

We preheat the oven to 200º C.

In a bowl we beat the soft butter, with brown sugar.

We put the chopped chocolate on a plate and melt it for a few seconds in the microwave. We add it to butter and brown sugar.

While continuing to beat, we gradually add the eggs and the jam.

We sift yeast and flour on the previous mixture and we are incorporating it. We beat until we get a homogeneous mixture.

Grease a mold of the appropriate size and pour the mixture, we will not fill it to the top as it would come out during cooking. We introduce in the oven and we cook until we verify with the help of a stick that the central part is well cooked.

Tasting

To present this chocolate cake and blackberry jam, we can sprinkle it with icing sugar.

To dress our gala cake, we can also make a accompanying sauce: in a saucepan we put a couple of tablespoons of jam and some liquor that we have at home, stir and remove from heat. We cut the cake into pieces, we distribute it in plates. Sprinkle one part of each piece with icing sugar and the other part water it with the sauce.

If we also want to dress it with authentic luxury we can compose a dish by putting in the background some vanilla ice cream semi-cold, simulating a soup, a little sauce decorating the soup and a piece of cake with a pinch of icing sugar placed on top.
