As I have already told you, my wife is originally from Vega de Baja, specifically from Orihuela. And from time to time he asks me to make typical recipes from that area. And as always everything is very rich. In this case I wanted to do the silly cake recipe.
The silly cake is a sponge cake that is very spongy, soft and with a large degree of moisture. It is characterized by carrying milk, oil and flavorings such as the zest of a lemon or cinnamon.
Ingredients for a 22 cm mold.
The recipe was given to me by my wife's grandmother and she gave it to me in "cups," so I passed it to grams. You will need 250 gr of sugar, 3 eggs, 125 ml of Extra Virgin Olive Oil (EVOO), 150 ml of milk, 300 gr of flour, 1 envelope of yeast (Royal type), the zest of a lemon (or an orange) , 1/4 teaspoon of cinnamon and butter mocha to spread the mold.
The keys to making the silly cake will be to get a perfect egg shake and control the temperature and time of the oven. If we consider this, we can start.
We beat the eggs and control that they increase at least 3 times their volume. Then we add the sugar several times (two or three). When it is well mixed we incorporate the EVOO (I have used Arbequina, a very soft variety) and the milk, we continue mixing. Then we incorporate the sifted flour and the envelope of yeast. Mix well again. And finally we add the zest of the lemon or orange (controlling not grating white part that would give unnecessary bitterness) and cinnamon. Personally I prefer the zest of the orange that besides being cheaper than the lemon, it gives a much richer and softer touch.
It only remains to spread the mold with butter and introduce for about 50 minutes in a preheated oven at 160 ºC. When removing it should be slightly golden on top, you will see that it will look like a giant cupcake (saving the differences). And if we introduce a skewer in the deepest part it should come out dry.

I advise you to do the silly cake recipe for breakfast mainly. Well wrapped lasts at least 4 days in perfect condition. And it is also a very homemade and healthy way to accompany juice and coffee or milk.
