Endives with fried egg curry sauce

If you feel like preparing a delicious and different appetizer, we suggest some endives with fried egg curry sauce. It is a very simple recipe with which you will amaze diners, especially when they know the ingredients of the sauce, easily identifiable.

The ingredients 3 endives, 3 eggs, 50 grams of semi-dry flaked cheese, curry, black pepper, a little Hawaiian salt, 1 avocado, poppy seeds, caviar or roe of lumpo, olive oil and salt. The preparation Defoliate the endives and leave them in a bowl with water for ½ hour to eliminate the bitterness they sometimes produce.

Fry the eggs in a pan until you see that they are ready, remove them and put them in the blender glass, add a couple of tablespoons of oil, a little curry, ground black pepper, cheese and Hawaiian salt ( try the salt point not to pass).

Beat the whole set until you get a fine sauce and reserve. Prepare the avocado dressing, deposit in a bowl two tablespoons of oil, a teaspoon of poppy seeds and a little salt and mix well.

Peel and cut the avocado into small cubes eliminating the central bone, prepare the serving dish and place a hoop in the center, insert the avocado and pour its dressing over it. Drain and dry the endive leaves one by one, fill them with the fried egg sauce and put a little caviar on it, place them on the serving plate.

Now you just have to serve the appetizer with some freshly made toast.

Tasting The fried egg sauce is also especially suitable to combine with a hamburger (which is what we like most) or a beef steak, you can also add different ingredients getting a unique flavor each time.
